Jamón ibérico, also known as pata negra, is a Spanish ham made from black Iberian pigs. The most expensive hams come from free range pigs that live in the oak forests at the border of Spain and Portugal. The ham is cured for a long time before being sold, some producers take up to 4 years for this process. Outisde of Span and Portugal, them ham is very hard to come by, only since 2005 the ham is imported to the United States.
